Pumpkin Spice Pancakes

The Fall season is upon us and it’s time for everything “pumpkin spice”. While you are enjoying your latte, the kids can get into the act, too, and make these seasonal pancakes. Enjoy!

Pumpkin Spice Pancakes            Makes 6 Cakes

Ingredients:
¾ cup Water
¼ cup Canned Pumpkin
1. cup Complete Buttermilk Pancake Mix
¼   teaspoon Pumpkin Pie Spice
Oil (for pan)
Butter
Maple Syrup

First get 2 bowls for mixing.  In one bowl combine ¾ cup water and ¼ cup canned pumpkin.  In the second bowl, mix pancake mix and pumpkin pie spice. Dump the dry ingredients into the wet mix and stir until large lumps disappear and small lumps remain.  Be careful not to overmix.

Heat pan with very thin layer of oil to medium heat. For each pancake pour ¼ cup of batter onto hot pan.  Cook until small bubbles appear on top of the pancakes and the edges start to brown. Carefully flip and cook the other side until golden brown.

Serve hot with butter and maple syrup.
