Favorite Trail Mix

Pack this crunchy snack for your summer road trips, camp outs, or staycations. This trail mix starts and ends with homemade peanut butter granola, (recipe to follow). After you layer the granola base, get creative with nuts, crackers, dried fruit, candy, or just about any bite-sized snack you can imagine. This granola is not overly sweet, so you can experiment with salty/savory and sweet additions. Make your own favorite mix, and take it “to go”!

Crunchy Peanut Butter Granola
Ingredients
3/4 cup natural peanut butter
1/4 cup vegetable oil
1/4 cup milk
2/3 cup maple syrup
1 tablespoon vanilla
3 1/2 cups old fashioned oats
7/8 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Directions
Preheat oven to 275 degrees, and line a cookie sheet with aluminum foil. In one bowl combine the first five wet ingredients, and in a second bowl combine remaining four dry ingredients. Dump dry mixture into wet mixture, and stir until combined. Spread dough into prepared cookie sheet and bake for 45 minutes until golden brown and dry, stirring every 15 minutes to promote even cooking. Let granola dry at room temperature until fully cooled, and store in an airtight container for up to one week. Try granola sprinkled over yogurt and smoothies, or use as a base for trail mix.
