Nana’s Tamale Pie

This month, I’m excited to share my Grandmother’s Tamale Pie recipe. You will need to mix this masa with your hands, so be sure to wash your hands well before you start cooking. The ingredients that add flavor to this dish include green chile, tomatoes, corn, and cheese. You can play with these ingredients by substituting fresh tomatoes and chile instead of canned, or leave an ingredient out if you choose. Feel free to make it the way you like it!

Ingredients
3 Cups Masa Harina
1 Teaspoon Salt
1 Teaspoon Baking Powder
1/4 Cup Shortening, or Coconut Oil
1/2 Cup All Purpose Flour
(1) 15 Ounce Can of Creamed Corn
(1) 15 Ounce Can of Diced Tomatoes
(1) 4 Ounce Can of Diced Green Chile
8 Ounces Mild Cheddar, Diced

Directions

Preheat oven to 350 degrees, and coat a 13×9 inch baking pan with cooking spray. Add salt to Masa Harina. Wet masa with water and mix by hand adding small amounts of water until the masa becomes a dough that can be gathered into a ball. Add baking powder, shortening, and flour, mixing well until combined. Next, add creamed corn, whole tomato, green chile, and cheese. Continue to mix the masa with your hands until the ingredients are evenly distributed. Scrape mixture into the prepared pan, and bake for 30-35 minutes. The edges will look slightly browned, and the cheese will be melted.
