Start a new holiday tradition with Lemon Crescent Cookies

The kids can make these “snow covered” treats for a teacher, or a holiday party. They look and taste fancy, but are incredibly easy to make.

Ingredients:
1 cup butter, softened
2 cups powdered sugar, divided
1 teaspoon lemon juice
½ teaspoon salt
2 teaspoons lemon zest, finely grated
2 ¼ cups flour

Preheat oven to 350*, and line 2 cookie sheets with parchment paper. Cream butter, ½ cup of powdered sugar, lemon juice, salt, and lemon zest. Blend in half of the flour, and then add the rest and stir hard until the flour is fully combined into the cookie dough.

Shaping the cookies is the most fun! Break off a tablespoon of dough, and roll it between your hands to make a 4-inch tube. Place the dough on the parchment lined cookie sheet, and shape into a big “C”. These cookies don’t spread much, so you can position them about 2 inches apart. Bake for 10 to 12 minutes, until they are no longer wet looking.

While the cookies are baking, dump the remaining 1 ½ cups of powdered sugar into a large bowl. Make sure that you let the cookies cool for 10 minutes, and then roll each one into the powdered sugar. After that, repeat rolling the cookies in the powdered sugar for a second coat.

Makes about 36 cookies.
